DongFangMeiRen Tea 東方美人茶, also known as Oriental Beauty Oolong Tea, is a meticulously crafted semi-oxidized tea hailing from Taiwan's MiaoLi and XinZhu regions. This exceptional tea is created from tea shoots of the QingXinDaPang cultivar, intentionally infested by the tea jassid (Jacobiasca formosana). These tea jassids stimulate the plant's intricate defense mechanisms, resulting in a distinct flavor profile with nuanced notes of nectar and ripe fruit.

茶醉最老工藝琴酒

福爾摩沙之美柏林盛開

琴酒,是以穀物為原料發酵,並用杜松子為主的多種藥材與香料調味成的蒸餾酒。與許多烈酒一樣,歐洲人最初飲用琴酒是為了藥療及強身健體。十八世紀,琴酒與具有防治瘧疾功效的通寧水(Tonic Water)、糖、萊姆汁拌製成琴通寧調酒(Gin Tonic),口味清爽迷人,將琴酒的受歡迎程度推上高峰。琴酒與琴通寧在歐洲廣為流傳。

 

來自德國柏林的醫生卡爾 ⋅ 曼貝(Dr. Carl Mampe)也在此時投入琴酒配方的鑽研,隨後推出一款名為『曼貝苦露 Bitteren Tropfen』的琴酒。其酒液帶著辛香的草本調,尾韻標誌性的菊科苦菜氣息令人回味。1831年,MAMPE 曼貝琴酒工藝於焉誕生。

 

「MAMPE 曼貝琴酒工藝廠」作為德國首都最古老的琴酒蒸餾廠,除堅持傳統,全配方採用100%天然在地食材,近年仍與時俱進、推出多款新式琴酒。包括以蘋果泥、櫻桃、肉桂調味的『巨嘴鳥琴酒 Toucan Gin』、在原味苦露上添加杏桃、苦橙、羅勒葉的『半半琴酒 Halb-Halb Besonderheit』等,受到饕客與調酒師喜愛。在在顯示曼貝琴酒工藝廠對探索細緻的風味組合,始終未曾停歇。亦是該廠與來自臺灣的精品茶團隊「Deerland Tea 鹿野茶房」合作的初衷。

Deerland Tea 是由一群不斷研習臺灣茶工藝、對追尋臺灣茶極致風味近乎狂熱的評茶師(臺灣農業部茶及飲料作物改良場授證)於2020年在德國漢堡組建。強調精品茶葉評鑑應由工藝、品種、風土等客觀條件出發。並以國際葡萄酒、香水品味語言為基礎做分類及媒合。為歐洲餐飲市場提供細緻的選茶服務。團隊活躍至今,與多家米其林餐廳持續合作,客戶遍及德國、奧地利、波蘭、法國、義大利等地。深獲好評。

精選臺灣苗栗老田寮存藏茶

歷史最悠久的東方美人茶鄉

『曼貝 ⋅ 東方美人工藝茶琴酒』所用原茶,由鹿野茶房選取經三年存藏陳化,產自苗栗老田寮茶區的東方美人茶。老田寮茶區(今苗栗頭屋一帶)是現存文獻記載中最早開始生產東方美人茶的茶區。當地匠人精湛的手藝與悠久的歷史呼應,令老田寮茶區聲名遠播。日治時代與文山、凍頂、名間合稱「臺灣四大茶區」。

 

三年存藏,緩慢的氧化催生了這支老茶的酸梅香,交疊原本東方美人獨具的玫瑰花香、龍眼殼香,沖泡後混合成帶有黃耆、山楂、檀木氣息的木質調;尾韻微甜似無花果。陳釀猶勝新造,盡顯『茶中香檳』美名。

原生臺灣的東方美人

用傷痕改寫世界茶史

蜜黃湯色的『東方美人茶』,是一款選用特殊葉料,經重萎凋、重醱酵等繁複工法製成的臺灣烏龍茶。百餘年前,臺灣桃竹苗一帶的客家庄已以生產高醱酵度的精品茶葉聞名。相傳當時一位茶農,一季見其茶園深受小綠葉蟬侵害,導致茶芽與嫩葉捲曲、紅脈、點點焦黑,像被火燒過般難看。賣相差的茶菁原本沒有採收出售的價值。但農人不捨天賜,採後逕行手工製作,格外悉心調整萎凋與醱酵的工序。竟讓傷痕累累的茶葉產生了前所未有、宛如玫瑰、荔枝、和釀酒葡萄的香氣。

 

現代研究發現,被小綠葉蟬嚙食、受過傷的芽葉,其內容物質與健康芽葉不同。這其實是茶樹的抗害機制:藉調整分泌,對外忌避害蟲;對內修復傷口。正由於這些歷劫猶生的變化,傷而不枯的芽葉在製茶師的琢磨下才能重生成為獨一無二的美人。

 

東方美人茶的製作工藝發源於臺灣;是臺灣獨特的茶款之一。它的誕生為世界製茶工藝史翻開了新頁。主要用以製作東方美人茶的茶作品種『青心大冇』,由日治時代製茶試驗場進行選育,亦是在臺發跡的特色品種。
